  • 6 cups beef broth

  • 1/2 cup chopped fresh parsley, for garnish


Instructions

  • Prepare the beef by trimming excess fat and cutting into even, bite-sized cubes. Pat dry with paper towels to ensure proper searing.

  • Heat olive oil in a large soup pot over medium-high heat. Add garlic and onions, sautéing until onions are translucent and garlic is fragrant.

  • Add beef cubes in a single layer, avoiding overcrowding. Brown all sides to develop rich flavor.

  • Add carrots, celery, and potatoes, stirring to coat with aromatic mixture and beef juices.

  • Pour in beef broth and water, ensuring all ingredients are submerged. Bring to a gentle boil.

  • Season with thyme, rosemary, bay leaves, salt, and black pepper. Reduce heat to low, cover, and simmer for 1.5 to 2 hours.

  • Skim off any excess fat or foam that rises to the surface for a clean broth.

  • About 15 minutes before serving, taste and adjust seasoning with additional salt or pepper if needed.

  • Remove bay leaves and ladle soup into bowls. Garnish with fresh parsley and serve hot with crusty bread or a side salad.

Notes

Use fresh garlic for the best flavor. Soup tastes even better the next day. Adjust garlic quantity for milder or stronger flavor.
